With its tapestry workshops and commitment to contemporary crafts the Dovecot Studios is one of Edinburgh’s hidden cultural gems. The former swimming baths now has its long-awaited permanent café in a simple but bright and stylish gallery alongside the studio’s entrance foyer. Richard Conway’s new company, Stag Espresso, has set up a daytime café that’s clearly in the mould of his most recent employer, Barry Bryson’s Cater, who run the City Arts Centre Café and various seasonal operations at places such as Jupiter Artland. In its sleek white setting, the Dovecot offers a choice of daily soups alongside half-a-dozen clean-cut, hearty-healthy sandwiches, decent cakes and pastries, along with well-handled Artisan Roast coffee and Tea Pigs tea. For now it’s the best-kept secret of the nearby University departments and switched-on cultural connisseurs; stroll 100 metres off the main drag down Infirmary Street and it might be yours too.

Newly opened and the cafe for Dovecot Studios I absolutely LOVE Stag Espresso and wish it was closer to my house! Again you wouldnt even know it was there as its right down the end of Infirmary street but its worth seeking out. Yes they only have a limited menu - salad soup and sandwiches but everything they have on the menu looks gorgeous so theyve chosen well. The sandwiches were £5.45 and came with salad - lovely. I got the lemon and corriander hoummus, tomato, carrot and rocket. It came out on chunky bread and was exactly the perfect portion size and was absolutely divine! Really fresh and light but perfect. They also had ham with stag chutney and brie I think - gorgeous! My husband got pastrami, brie, rocket and mustard mayo which is making my mouth water just typing it. They also had gorgeous looking cakes and their coffee is by Artisan Roast and they seem to take the same pride and care in their coffee which is I know hard to believe when you’ve seen how crazy the Artisan Roast guys are, but its true. The coffee even came out with a knitted holder around the outside of the lattee glass so i wouldnt burn my fingers - Amaze !!!! Really nice area of seating, white and light - matching the studios themselves and the staff are really lovely and friendly.. Definetly worth looking for. by matcheff MartiJeremiahShelley
